Ingredients (serves approx. 4)
For the pancakes:
- 200 g flour (all-purpose or spelt)
- 2 eggs 400 ml milk
- A pinch of salt 1 tsp sugar (optional, to taste)
- 1 tsp butter or oil for frying
For the filling:
- 150–200 g Lemberg Fisch Atlantic smoked salmon, thinly sliced
- Fresh dill (optional)
- A little crème fraîche, cream cheese or butter (optional)
Preparation
- Prepare the pancake batter: Mix flour, eggs, milk, salt (and sugar if using) into a smooth batter. Let it rest for 10–15 minutes. Cook the pancakes: Lightly grease a non-stick pan, heat it, and cook thin pancakes one after another until golden brown on both sides. Keep warm.
- Fill and serve: Place a few slices of Lemberg smoked salmon on each pancake. Optionally spread with crème fraîche or cream cheese, garnish with dill or other herbs. Serving Suggestion
- For breakfast: Serve with a cup of black or herbal tea. Fresh orange juice also pairs nicely.
- For afternoon tea: Present on a tiered tray with other savory snacks. Black tea like Darjeeling or Earl Grey with lemon or honey works especially well. You can also place Lemberg salmon caviar on the table for an extra touch of luxury.
Tip: This delicate combination of thin pancakes and fine salmon is perfect for brunch buffets, picnics, or as a light appetizer for festive occasions.
